Recipe Time! Healthy Lunch Ideas That Aren’t Salad!

Too often, when people hear the words “healthy food,” their minds wander to simple salads, a bland palette of flavor, and boring options. Oh no, no, no, my friends; healthy eating is delicious and addictive too. Allow your imagination to tantalize your tastebuds with these incredible recipe ideas.

The Green Goddess Crunch Sandwich

There are many variations of the “Green Goddess,” each one adjusted to the creator's personal taste preference.

Imagine a crispy, crunchy salad between two grain-filled slices of bread, and that’s the Green Goddess. Crispy bibb or butter lettuce combined with refreshing cucumbers, avocado, chives, sprouts, spices, mayo, and greek yogurt are beautifully displayed and delicious.

Buffalo Chicken Bowls

Fresh, healthy, and easy are definitely on the menu. The recipe is flexible, with plenty of room to swap ingredients for others.

You can add rice to your buffalo chicken bowl if you’re good with the carbs. The recipe works well, with or without it. If buffalo isn’t your flavor, swap it out for something your palette will appreciate.

Zucchini Noodles w/Kale Pesto

How about pesto vibes minus a considerable chunk of carbs and calories.

Cutting back on carbs can be a struggle in a world full of delicious bread, baked goods, and pasta. Zucchini noodles come pretty close as a noodle replacement. It’s more of a mind-over-matter thing because the flavor is impressive. While Zoodles may not trick your mind, the recipe might make your hit list regardless.

Vegetarian Pho Recipe

Who knew this level of deliciousness could be so easy. You can make the pho recipe the night before work and heat it up later. Or, you might be able to find an on-the-go recipe where you pack the ingredients in a jar and add hot water when you’re ready to eat.

California Chicken, Veggie, Avocado & Rice Bowls

A lunch so good, you’ll forget it’s healthy for you. It’s easy to work this into your regular meal prep. The California-inspired marinade is delightful and full of flavor.

Red bell peppers, zucchini, fresh garlic, cherry tomatoes, basmati rice, fresh lemon juice, avocado, parsley, walnuts, olive oil, and crumbly cheese (feta or goat).

Portobello Mushroom Pizzas

They may not be like “Bagel Bites,” but they’re definitely delicious. This healthy take on pizza can even get the kids interested in trying a bite.

All you’ll need is large portobello mushroom caps, marinara sauce, mozzarella cheese, a sprinkle of parmesan, and the toppings of your choice. Be mindful not to add too much sauce or watery vegetables as mushrooms hold moisture in, which can cause soggy pizza.

Asian Lettuce Leaf Wraps

The ground beef in this recipe can be swapped out with numerous ground meets and even tofu. Asian food tends to be high-sodium. If you’re trying to watch your salt intake, switch to a low-sodium soy sauce and other low-sodium ingredients.

Eating healthy doesn’t have to be boring; you simply need the recipes with the knowledge that allows you to take simple ingredients and turn them into delicious lunches.
